Man, that was huge.

Salad: 2 cups of 50/50 "spring mix" (spinach and other "baby" leafy greens), 1/2 cup red bell pepper slices, 1/4 of an onion cut into slivers, 2 Tbsp olive oil viniagrette

113 calories, 6g fat, 50 fat calories, 2g protein, 15g net carbs, 3g fiber

Spaghetti with meat + veggie sauce: 1 serving whole wheat angel hair pasta, 1/4 lb super lean ground beef, 1/2 cup Ragu Robusto 4 cheese spaghetti sauce, 1/4 cup cubed red bell pepper, 1/4 of an onion diced, 1/4 cup of thinly sliced mushrooms, 3 cloves of garlic (which I have now determined is my limit)

516 calories, 9.5g fat, 81 fat calories, 43g protein, 62g net carbs, 7g fiber

Guh. It was so filling that I actually contemplated leaving the meat out next time. Momentarily. And then I punched myself in the scrote to make sure it was still there.

All those numbers are an approximation, but... that's just under 1/3 of what I'm supposed to eat in a day. I should've taken it a little slower, probably, but...

OK - I'm confused. Are you trying to:
lose wt?- sounds like this meal should keep the hunger pains away for awhile
gain wt? - what the heck - burp again & have some dessert
eat a healthier diet? - maybe some fruit

Hey, betcha can't top what I've been eating the last couple of days: entire pizzas and cheescakes. Don't even want to know the calories & fat. But it sure is yummy ...albeit nauseating

Well good luck with whatever you're trying to accomplish: weight loss, weight gain, vitamin intake...

No, I'm feeling girly contemplating leaving meat out of my meals. In addition to that, I can't imagine getting all those calories from somewhere besides protein...

sounds like a good meal, and your sauce is alot healthier than what I make.

I started experimenting with making my own sauce while SPC Nbs was in Korea, and now when I make sauce I usually use 8-12 Roma tomatoes, 1 can of tomato paste, 1/2 large white onion, finely chopped, an entire head of Garlic, finely chopped, about 2 pounds of ground beef, various spices including about 1/4 to 1/2 cup sugar, depending on my mood and on how much cinnamon I use. The cinnamon is the "secret" ingredient, as it enhances the flavor of the sugar, allowing you to use less but still enjoy the sweetness.

Something else that I find is pretty good is chopping yellow squash, zucchini, tomatoes, onions and garlic and sauteeing them together with assorted spices. You can eat it with rice or pasta, by itself, with chicken, or my preference--with beef cut into stew-sized pieces. Add a little bit of shredded cheese on top (preferably parmesan, and not the stuff you shake out of the bottle), and you have a wonderful meal full of vegetables that is pretty easy to make as well as being versatile.

I hesitate to ask but... is that one serving, or for you and NBS, or do you expect leftovers? Mine was just one serving, one sitting.

Still, with all those vegetables, you might be surprised how little they contribute to the calorie count. Let's see: 1 medium tomato, 26 calories; 1 medium onion, 48 calories; 1 clove garlic, 4 calories (so you're looking at about 40?)... the big deal would be the beef (even going lean isn't that great) and the sugar. I'm finding that portion control is *huge* for me... pre-measuring and eating slowly helps me.

so, next time, if you don't want to try ground turkey, try cutting the beef to 1/8th pound...that's your major source of calories right there, and it probably won't seem as bad as you think.

Well, the 1/4 lb that I used wasn't bad. That's supposed to be 1 serving of meat, anyway. 500 calories for my main meal of the day is actually right about where I want to have it.

I *do* need to try ground turkey, though.

When I make sauce, I make it to last several sittings. I started experimenting with my own sauce when he was in Korea, so when I would make it, I would make it to last for a week or so, with other meals thrown in in between, of course.

As far as the sugar in the sauce, you can substitute splenda (it works well), but you can also use real sugar, just less of it, and still have it as sweet if you use the cinnamon in it too.

I don't have the willpower. I have to make a single serving of a finished product or I may eat too much. I can cook up some ground meat and set it aside, but I don't have the confidence in myself to set aside portions of meat sauce.
