"I'm WAAAAY better than meatloaf....." - K
Modified from a recipe found in Muscle&Fitness magazine, three issues ago:
This time, I kinda doubled it to a 2-lb meatloaf, way too much for me to even think about eating all of it tonight. I'm trying to train myself to save food for leftovers, and I bought a microwave today.
1lb extra lean ground beef
1lb lean ground turkey
1/2 cup seasoned bread crumbs
2 eggs, whole (the recipe called for 2 egg whites, but I'm going full fat on these bad boys)
1/3 cup BBQ sauce
1/2 an onion
3 cloves of garlic
The onion and garlic is coarsely cut, because I'm not good enough to do it any other way. I did buy an actual cutting board today, so I don't have to use a paper plate, but I still only have those four crappy steak knives. I mean, they're good steak knives, they're just not great cutting-up-onions-and-garlic knives.
Mix everything together in a loaf pan and then wash your hand because it has egg and meat and bread crumbs all over it.
The recipe for 1/2 of this called for 375 degrees for 25 minutes. When I followed it more precisely the first time I tried it, that wasn't quite enough to get all the pink out of the middle. This time I was at 375 for 35 minutes, and ate 1/8 of the loaf (which would be a serving size). Then I put it back in for 5 minutes and ate another 1/8 of it (continuing on toward the middle). This was where the pink started. So, it's going to "season" in the oven a bit more before I put the rest (3/4) of it away for another day.
If I get hungry later, it's time for corn on the cob (so it doesn't go bad, it's been in the fridge for a couple days). Tomorrow is going to be a ham (my second ever). Wish me luck.
